Ruby Sunshine Expands Across the Southeast

 

NEW ORLEANS – Ruby Sunshine, the latest concept from the collective behind the acclaimed New Orleans-based eatery Ruby Slipper Café, is taking the Southeast by storm with plans to open three locations across the region in the first half of 2019. Details were shared in a press release.

The first location of the New Orleans-inspired brunch concept will make its debut in historic downtown Franklin, Tennessee on March 18, followed by a second location in Knoxville, Tennessee later this spring.

The restaurant will also expand into Alabama this summer, with the third location in Birmingham’s Homewood neighborhood being announced earlier this week.

“We’re so excited to debut Ruby Sunshine in these three markets,” said Ruby Slipper Restaurant Group founder, Jennifer Weishaupt, who, along with her husband, Erich, opened the original Ruby Slipper Café in 2008. “We set our sights on Franklin, Knoxville and Birmingham because these warm, welcoming communities are a perfect fit for our brand of Southern hospitality.”

The Weishaupts have plans to announce even more locations across the region into 2020. Each location will offer a menu echoing that of Ruby Slipper Café, featuring New Orleans-inspired spins on traditional Southern favorites, including benedicts, pancakes, and French Toast, as well as eye-opening cocktails.
